VINIFICATION: Maceration with skins / Pressing /Decantation in inox vats / Fermentation between 12 to 14ºC /Aging "surlies" for 4 months /2nd fermentation in bottle / Dégorgement after 46 months.

Tasting Notes: Crystaline, straw color with citrus reflections, showing fine and persistente bubbles. Complex aroma, where citrus fruits are combined with nuts and “brioche”. In the mouth a subtle honeyed sweetness is involved with aging aromas. A creamy foam blends with the acidity enhancing a refreshing structure.
Gastronomic suggestions: Oysters, crustaceans, gently flavored white fish, cream and spicy dishes, sushi.
